Let’s talk about broccoli!

Whether we want to admit it or not, broccoli is GOOD for us! You can eat it raw, dipped in hummus or dressing, steam it, stir-fry it, roast it in the oven, or throw it on the grill! Although we know it’s good for us, WHY exactly is it good for us?

Easy Roasted Broccoli

Ingredients:

  • 2 cups broccoli florets
  • 1 tablespoon olive oil or coconut oil
  • lemon juice to taste
  • 2 cloves garlic, minced
  • salt and pepper to taste

Directions:

  • Preheat oven to 400 ° F
  • Mix florets with oil, garlic, and lemon juice
  • Transfer to foil-lined baking sheet and season with salt and pepper
  • Roast in preheated oven until tender and lightly browned (about 15-20 minutes)

Grilled Broccoli and Lemons

Ingredients:

  • 1 bunch broccoli, cut into 8 large spears
  • 2 lemons, quartered
  • 2 tablespoons olive oil, plus more for drizzling
  • salt and pepper to taste

Directions:

  • Heat grill to medium
  • In large bowl, toss broccoli and lemons with oil and season with salt and pepper
  • Place broccoli and lemons directly on grill, turning occasionally, until tender and lightly charred (about 10-15 minutes)
  • Remove from grill, squeeze lemons over broccoli and drizzle with additional oil
